
For the uninitiated, Jerk is a style of cooking native to Jamaica in which meats are grilled with a very hot spice mixture called Jamaican jerk spice. Jerk seasoning's cornerstones are allspice and Scotch bonnet peppers with other ingredients such as cloves, cinnamon, scallions, nutmeg, thyme, garlic.
But, at Lab 24/7 next Saturday, anything goes as three cooks compete with their own interpretations of Jerk for your tasting pleasure. And they're hope is that you'll vote for them as Lab 24/7's "Big Jerk 2009".
